The Ultimate Chicken Salad Sandwich

The Ultimate Chicken Salad Sandwich

Get ready to meet your new lunchtime obsession. This isn't just any chicken salad—it’s an absolute flavor bomb that will have you counting down the minutes until your midday break.

Imagine tender shredded chicken tossed with juicy, sweet pops of red grapes, the savory, nutty crunch of toasted almonds, and crisp fresh celery. But the real magic? It’s all folded together in a rich, creamy dressing spiked with fresh lemon juice that brightens every single bite and keeps it tasting incredibly fresh. It is the perfect harmony of sweet, savory, creamy, and crunchy.

Ingredients

The Salad:

  • 1 lb cooked chicken: Shredded breast or thighs (about 3–3½ cups). Pro-tip: A store-bought rotisserie chicken works perfectly.

  • 1 cup red seedless grapes: Halved or quartered.

  • 2 stalks celery: Finely sliced.

  • ½ cup almonds: Toasted (can swap for pecans, walnuts, or cashews).

  • 1 green onion: Sliced.

  • ⅓ to ½ cup mayonnaise: Depending on how creamy you like it.

  • 2–3 Tbsp fresh lemon juice: (About 1 lemon). This is the secret ingredient for keeping it fresh!

  • ¼ to ½ tsp kosher salt & black pepper: To taste.

  • 1–2 Tbsp fresh herbs: Optional (chives, parsley, dill, or tarragon are great).

Instructions

  1. Combine the Base: In a large mixing bowl, toss together your shredded chicken, grapes, celery, toasted almonds, and green onion.

  2. Make the Dressing: Add ⅓ cup of mayo, 2 tablespoons of fresh lemon juice, your salt, and your pepper directly to the bowl.

  3. Mix and Adjust: Use a spatula to fold everything together until well combined. Give it a taste—add a little more mayo if you want it creamier, or an extra squeeze of lemon juice for more tang. Fold in your fresh herbs if you're using them.

  4. Build the Sandwich: Toast your slices of Inked Bread so they have a nice, crisp exterior to hold up to the creamy salad. Pile the chicken salad high, and top with your second slice of Inked Bread.

Leftover chicken salad can be stored in an airtight container in the fridge for up to 3–4 days—perfect for meal-prepping your weekday lunches!
